Do you fancy a cookie?
@Esquirecare asked for my take on a recipe they had posted, available here for a gander. If you want cookies asap and have a bag of ready prepared cake mix in the cupboard, amazing tasty things can happen.
I sought the advice of my four year old chief taster.
He said he would prefer vanilla cookies with lots of rainbow bits, to the chocolate cookies of the original recipe (weird child). ‘Bits’ is kid-speak for hundreds and thousands.
- 400g Sainsbury’s Vanilla Sponge mix.
- 2 medium eggs.
- 110ml vegetable oil.
- Icing sugar/hundreds and thousands.
The recipe is simple; it took me less than ten minutes to make, and ten to bake which is great for a child with the attention span of a bluebottle.
We chose Sainsbury’s Vanilla Sponge mix (400g) because it is only £1 and I thought that would give the best measure of mix to egg ratio (as the original recipe did not say).
I love a guesstimate ingredients game.
Combine the mix with two beaten eggs and 110 ml of vegetable oil. Then get your little helper to hand mix with a spoon (it is not a messy mixture and there is no need for an electric whisk!).
The recipe said ½ a cup of oil. I think that would have made the mix way to moist and ‘slimy’ as my son described. Shape into small 1 inch balls. We experimented with different sizes and the smaller the better as they spread good and proper in the oven.
You can put them in the fridge for a couple of minutes to hold their shape better, sieve icing sugar onto a plate and pour in the hundreds and thousands (mix them together as otherwise if you cover with icing sugar first the bits don’t stick!) I went snow globe crazy with the icing sugar. It does dry up the balls and gives a lovely sugary crunch after the bake.
I put 12 on a large, greased baking tray and they all joined up and made friends. I would next time put 6 per tray with good separation and keep an eye on them in the oven!
Pop ‘em in the oven at 180 degrees for 10-15 minutes and take cookies out when they are golden brown. Let cool for five minutes before removing them onto wire tray or they will fall apart. Mmm have a warm munch.
